Apple picking

pasta brisee` per la crostata, sufficiente per due sfoglie, sopra e sotto;
1 tuorlo d'uovo;
1 cucchiaio di latte;
1.3 kg di mele (Macoun, Granny Smith, Cortland, Jonagold, Empire) pelate e tagliate sottili;
2 cucchiai di limonata;
1/4 tazza di zucchero;
1 cucchiaino di cannella;
1 pizzico di noce moscata;
1 pizzico di sale;

That is a very good way to spend the fall weekend in New England; of course we need to hope for a warm and sunny weather.
How the “game” is working? You need to pick the apples directly from the three to full the bag and the belly (it's better to check the quality :-P).
Once you go back home it is very fast and easy to make a tasted apple pie. Oh well, it doesn’t take just five minutes, but if you have the right appliances (see the apple peeling below) the work became less hard. Yep, I just acquired the apple peeling and I found it very USEFUL.
The recipe for the apple pie (see Martha Stewart) is the following:

Pate Brisee`, must be enough for a 8-9 inch double crust;
1 egg yolk;
1 tablespoon milk;
7 cups (2 1/2 lbs) thinly sliced, pared tart apples (Macoun, Granny Smith, Cortland, Jongold, Empire);
2 tablespoon fresh lemonade;
1 teaspoon cinnamon;
1/4 teaspoon salt;
1 teaspoon
1/4 cup sugar;
2 tablespoons flour;
1 tablespoons butter.
In a large bowl mix apples, sugar, flour, cinnamon, butter and salt meanwhile the pate brisee` is refrigerating for half an hour. Prepare the bottom crust and toss the apple mixture into that. Add gently the top crust and freeze for almost 20 minutes.
Preheat the oven at 450 ºF, cut steam vents in the top crust and brush with egg’s yolk-milk; bake until the crust is golden, turn down the temperature at 350 ºF and bake other 30-40 minutes.
EAT the pie!!!!
Unfortunately the recipe work out so well that we ate all pie before I had a moment to take a picture.
