Focaccia con patate di ComidaDeMama

Non so quante volte avro` fatto questa focaccia in passato, una goduria, come dice Elena di ComidaDe Mama, da dove nasce la ricetta, "da sbattersi per terra" per quanto e` buona. Non so come mai non abbia mai postato la mia versione e non so neanche perche` sono circa cinque anni che non la faccio piu`. Come vola il tempo!! Ieri sfogliando il mio quadernino di ricette me la sono ritrovata sotto il naso "focaccia di patate di Comida" ed ero gia` li ad impastarla.

Ad essere sincera non avendo trascritto il procedimento ma solo gli ingredienti, ho fatto un po` di testa mia!

Ora qui gli ingredienti e se avete tempo provate la sua versione originale da qui:

2 patate bollite di media grandezza (io ho usato le gold, patate nuove)
600 g di farina (All Purpose King Arthur)
1 cucchiaino abbondante di sale
1 cucchiaino di lievito disidratato
1 cucchiaino di zucchero
300 ml di acqua tiepida
1 tazza di buon olio extravergine d'oliva

Bollire le patate, fare raffreddare, pelare e schiacciare bene. Mischiare la farina con il sale e la purea di patate. Risvegliare il lievito nell'acqua tiepida con l'aggiunta dello zucchero. Versare tutto nella planetaria ed impastare a bassa velocita` per circa 5-10 minuti. Il mio impasto era abbastanza appiccicoso a questo punto. Lasciare lievitare per circa 2 ore. Dopo la prima lievitazione stendere su una teglia, senza schiacciare l'impasto, distendere la pasta legermente spingendo con la punta delle dita ben unte d'olio. Lasciare lievitare per altri 40 minuti. Prima di infornare aggiungere una spolverata di fior di sale e un filo d'olio. In forno a 200 gradi per circa 20-25 minuti (dipende un po` dal vostro forno) fino a completa doratura.


I don’t know how many times I made this “focaccia” in the past; I don’t even remember why I didn't posted it before and why after I baked so many focaccie, I sadly forgot about this recipe and waited five long years to bake this magic focaccia again!Time is fling; there is no doubt on that!Last week going through my recipe book, I read this recipe again and in no time I was making this focaccia again. 
Ingredients:
2 medium size potatoes, boiled, peeled and mashed 
600 g all purpose flour (King Arthur)
1 tsp kosher salt + a little more to sprinkle the top
1 tsp instant dry yeas
t1 tsp sugar
300 ml of warm water
1 cup extra virgin olive oil.
 Dissolve the yeast and sugar in 300 ml of warm water.
Using a hook in the Kitchen Aid start to mix the mashed potato with the flour, add the dissolved yeast, mix a couple of minutes (speed 2); add olive oil and the salt and keep working the dough for at least 5 minutes more; add more flour as needed, you are looking for a non sticky dough. Once the dough is ready, get some olive oil on your hands and push the dough on a baking sheet to cover the entire area (cover the baking sheet with parchment paper and spray some oil on the surface).  Cover the dough with plastic a let it rise for almost two hours in a warm place (70-75 degree F).  After the dough has risen, sprinkle some kosher salt on top as well as a drizzle of olive oil and poke holes in the dough using your fingertips.In the oven, 425 degree F for almost 20 minutes, the temperature depends mostly to your oven kind, but if you get the focaccia almost dark on the bottom and still clear on the top, turn on the broil for few minutes to get a golden crust. It’s important that you allow the focaccia to cool down before slicing into it.
